On this occasion, VIEW brought in a chef from Spain with an amazing reputation. Chef José David Fernández is a head chef at a restaurant called Pabellon de Florida Retiro in Spain, he is also a chef consultant for La Candela Resto, a restaurant with Michelin Star standards.
Chef José is famous with the technique of combining traditional food ingredients with modern cooking techniques that produced new innovations, interesting and certainly amazing taste. On this occasion, i tasted a set menu consisting of 7 dishes starting from Ostra Wasificada, fresh oyster dish along with their shells combined with wasabi kizami which gave a spicy sensation then the citrus jelly that balanced the taste was served separately.
Gazpacho de Kimchi, as the name implies you will know this is a combination of two different cultures. Gazpacho is a Spanish soup dish combined with the sensation of Korean kimchi giving a fresh taste and complemented with celery in the form of ice cream is truly unique and natural taste with a strong aroma.
Asusta el Chipiron, unique dish from processed calamari become like pasta with chewy texture and are served together with red curry through the spherification process (gastronomic techniques combine several elements) into a layer that wraps the curry and melts when split. Besides that, complete with shrimp with the right cook.
Solo Salmon, this is my favorite dish. Sounds simple, a piece of salmon as in general but with a "Bilbaina" style, a unique recipe for typical Spanish cuisine. Salmon with a different several layers from the bottom that is still raw to the ripe top layer gives the sensation of enjoying amazing salmon.
Carre de Cordero, the main dish of processed baby lamb has a super soft texture and a balanced flavor. Not so many dressing, but the savory taste of lamb meat is very tasty. Besides that it is served together with soft sweet potato cream and mushroom.
Albondiga de Teriyaki, this is the last savory dish, which is processed meat into a large enough size meatball and covered with thick teriyaki sauce and a very savory taste that almost covers the taste of the meat itself. This dish certainly fits well with the Jakarta society tongue that tends to like food with savory seasoning.
Basta, a dessert that is quite unique with Middle Eastern touches. Mozarabic coulant which resembles lava cake but a chewy texture like mochi is filled with thick citrus crème and covered with hanout which is a spice with a fragrant and unique aroma. The chewy texture and cream that isn't too sweet makes this dessert very enjoyable to have.
My dinner this time was very special. Feel the experience of enjoying a variety of Spanish dishes with international standards and not forgetting while tasting the typical Spanish wines like Condado de Haza Crianza, El Vinculo Crianza and many others make this dinner perfect. For another time VIEW provides a dining experience that never disappoints for sure.
