In 2019, the presence of a new Executive Sous Chef, Mauro Santarelli gave a fresh vibe with a variety of new menus in the form of typical Spanish food.
Originally from Argentina, but he stepped on a long career in Spain. Growing up on the farmland & ranches made him understand and pay attention to every ingredient to be processed. In 2016, he began joining the Hyatt group as a Chef de Partie at Park Hyatt Mallorca in Spain, then he was promoted as Chef de Cuisine after 2 years working there and now he is at the Grand Hyatt Jakarta starting in November 2018.
The style of cooking is inspired a lot from Spain, one of them like various tapas that I tasted last week. Surely he combines local ingredients with new creations so that they become amazing Spanish dishes like the following:
Garlic Prawn or commonly known as Gambas al Ajillo, a prawn dish served with garlic and olive oil, a fragrant aroma, prawn cooked well done and indeed as a classic Spanish style dish.
There is also Fried Baby Squid, which looks like flour squid that we usually find in restaurants. A simple but quite tricky dish where squid must be processed properly to produce the right chewy texture, then the squid-coated flour must also be crisp and not too oily. A special thing, here this fried squid can be enjoyed with black garlic aioli with a thick and savory aroma.
Common Spanish tapas like Albondigas, also known as Spanish meatball, is also here. It should be like meatball with a size like a ping pong ball and then doused with thick tomato sauce. The meatballs texture is rather dry, but with thick tomatoes that give a very savory taste when eaten.
Ensaladilla is also one of the mandatory dishes that you should try here, processed salads with potatoes, carrots, peas, and tuna pieces then served with creamy mayonnaise. Unique taste is very different from Indonesian food characters. You can certainly imagine how rich the taste offered by this one.
This is the couple of time I've tasted a meal at C's Steak & Seafood. From the previous chef until now they still serve interesting menu, a little different touch than before, but C's Steak has always prioritized good quality ingredients to serve a variety of dishes not only steak but also some Asian dishes which will certainly provide varied choices for Jakarta society.
